Rain Rain Go Away

Well Folks- I bring you another ICKY day! Rainy and cold.

YUCK! This is definitely a day for my rain boots. I present to you: The Rain Boots.

Instead of getting down because of the rain I warmed up to this delicious bowl of pumpkin oats for breakfast. I love my Halloween bowls…aren’t they just the cutest? My pumpkin oats was part of this complete breakfast.

I also lit my candle and watched some girly TV-Drop Dead Diva on DVR. Does it get any better?

My pumpkin oats started out with this packet of this original oatmeal.

I wanted the maple sugar packet, but there are far more calories than in the regular. I had some leftover pumpkin puree that I added in as well as cinnamon, nutmeg, pumpkin spice, and truvia. This was fantastic and absolutely perfect for this cold rainy morning.

I had a side of fruit planned, but after the oatmeal I was pretty full so I saved the fruit for a mid-morning snack.

And of course a perfect cup of coffee.

Sometimes I really don’t mind the rain. It makes me feel cozy, but it also makes me not want to leave my house. Such is not the case today because work calls. I just have to get through today and then I have my weekend. My weekend is usually Fridays and Saturdays.

The oats actually kept me pretty full all morning, and I didn’t even need my fruit.

Lunch was quite interesting, but somewhat creative. I had leftover pasta from last week with a few toppings. I don’t normally like pasta, but this pasta is probably the best pasta I have ever had, and I got it in Italy so I couldn’t let it go to waste.

And remember that tomato soup I didn’t finish last night? Well I actually used that as my sauce on the pasta. I mean why not?

I topped the pasta with leftover turkey pepperoni (thanks Kelly for leaving that-it has come in quite handy this week), baby portabellas, a some light Mozzarella cheese.

I also had some kale on the side. Kale is so much better with hot pepper flakes or balsamic vinegar, but I forgot both today! I decided to add a little Fat Free Italian dressing and that worked just fine!

Filling and satisfying. I should be good for a few hours. The rain is supposed to hold up the rest of this week and weekend. There go any running plans I ever had. Shucks!

A Rainy Night

Today’s weather has been the pits! It is cold, rainy, and gross out. It has been one of those cold, dark, rainy days that make you want be at home in bed with a good book or watching a good movie. And that is exactly what I am did when I got home. Chris and I had dinner and a movie planned for tonight.

I had this awesome Giada De Laurentiis spa meal planned for tonight, but the weather really put a damper on that meal. I was craving soup and a sandwich so I thought we would do paninis instead!

Chris and I used to ALWAYS make the best paninis back in LA, but let me tell you they were anything BUT healthy. Now, I know there are so many ways of making a healthy panini. But honestly I just wanted comfort food. So I compromised.

But first the snacks!

I love how colorful and vibrant kiwis are. This one was almost past its prime.

And I was still hungry a little later so I had some of the Cranberry Crisps. These little crackers are addicting. They are thin and crunchy with a hint of sweet. They are incredible with a soft brie or Fromage Daffnois, but I was trying to be good so I just had a few plain.

Dinner was simple and to the point. We shared my leftover Organic Tomato Soup from yesterdays lunch and made improv paninis. We don’t have any regular bread so I made mine on a lavash. I cut the lavash in half and made 2 paninis out of it. The first one was just simply tomato and cheese with a mayo/honey mustard shmear. The second one I just added a few more veggies and made it with tomato, cheese, mushrooms, turkey pepperoni, arugula, and a mayo/honey mustard schmear.

I love our Emeril Lagasse panini press. It was a free gift, and it has really made us some great sandwiches!

I was pretty full after the sandwich that I didn’t even eat my soup. I will save that for tomorrow. If I was really creative and had more time to prepare I would have done zucchini and eggplant paninis, but that will be next time. These were last minute.

After dinner we enjoyed these awesome No Pudge Fudge Brownies. My roomate in college got my hooked on them and I love them. All you have to do is add yogurt (in this case I added Greek yogurt) and bake.

It is so simple, and they come out all ooey gooey on the inside and crispy on the outside. I didn’t have the right size pan for them, but this worked just fine.

These brownies are dangerous…seriously!

Now off to watch our movie!
