Meal Planning & Another Winner!

This week I did a lot of meal planning, and it really helped me eat better and feel more prepared when it came to making dinner. I usually come home and just want to veg out in front of the TV with whatever I can find in the refrigerator and call it dinner. But this week I planned out my meals and made sure to have most of it ready by the time I came home, and it really worked! I ate better, saved money, and used up food I had in my apartment. I’m going to try to keep doing this as much as possible.

I took a few days off from blogging, and this is what you missed. I made fajitas the other night for Chris and me. Chicken for him, shrimp for me. These were some of the best fajitas I’ve made. We also used leftover rice from the salmon meal earlier in the week. I love using one nights leftovers in another meal. Look at this spread.



These were so so good. Fantastic really.


Breakfasts were also pretty good. I had toast with raw almond butter and pumpkin butter-my fave combo. This was the last of my pumpkin butter and I may or may not have shed a tear when it was through. ;-)



I also had a Chobani yogurt and Nutridel cookie. This was another *new to me* flavor of Chobani: Pomegranate. I love all the little pom arils mixed in. I crumbled up the pecan cookie in the yogurt for a little crunch and had some fresh strawberries on the side. This was such a filling brekafast. The last time I had Chobani and a nutridel cookie, I think I said the same thing. Whatever it is about this combination is filling for sure!



Lunches weren’t half bad either. I met Chris for lunch at Lebanese Taverna yesterday and ordered a plate of hummus, tabouleh salad, falafel, and moussaka with pita bread. I ate everything (well minus 3/4 of a falafel since it fell on the floor)-it was REALLY good. But I only I ate one of the breads.



Today I made a pizza on a 100 calorie whole wheat tortilla. Under all that gooey cheese was marinara sauce, lean ground turkey, broccoli, mushrooms, and fresh basil. It was awesome.

Last night we went to Chris’s parents house for dinner and had Thai food. I didn’t take any pictures, but I just had to show you dessert. His sister, who is 8 by the way, made this for all of us. I thought it was adorable!

I also received an awesome package from French Meadow Bakery. They sent me a bunch of their products from their gluten free line. I was so excited to get such a great package. There were cupcakes, cake, brownies, breads, and tortillas. Thank you so much French Meadow Bakery-you made my day! And of course I had to taste test the goods.

My favorite part of the cupcake was the icing. SOO good. And these brownies are to.die.for.

Oh my Goodness, Oh my Goodness

That is what I said after every meal I ate today. First I need to tell you that Project Rise and Shine was a complete fail on the first day. I was in bed at 10:30, but couldn’t fall asleep until 11, and when the alarm went off at 7:30am it just wasn’t happening. I woke up at NINE! Oh who am I kidding it was 9:17am. I know, it’s so late, but I really felt like I needed the sleep. It was the kind that you just can’t even open your eyes and before I knew it I was asleep again. But when I woke up at 9, I felt refreshed, re-energized, and great. I was even able to make myself breakfast, lunch, and start dinner, and make it to work on time. So I guess that is a start right?

My meals were all incredible today. First-this mess is what I call breakfast.

I loved the strawberry banana flavored Chobani, but didn’t have anymore so I made the flavor myself. This mess was a strawberry Chobani, 1 medium banana mashed in, 1tsp Maca, and some of this amazing stuff. I didn’t really like the texture of the yogurt with the Maca powder so I added the melted peanut butter, and it was the best decision I have ever made. I devoured this like it was no ones business.

Lunch was leftovers from dinner made into a big salad. We all know how I felt about last nights dinner, so this was right up there with it. I put the shrimp and rice on top of the lettuce and cukes and ate it outside soaking up some Vitamin D. It was down right gorgeous out today!!!

After hearing all this buzz about the cherry chocolate bomb smoothie all over the blogs I was really in the mood for one, but had no way of making one. I stopped by Sweetleaf and grabbed a smoothie made with non fat fro yo, strawberries, and chocolate chips. It was the next best thing.

And tonight’s dinner was chicken stuffed with feta and cranberry chutney and my beloved Quinoa with roasted broccoli and butternut squash. I also added some dried currants for some contrast. It was…how do I say it? PERFECTION.

Three of my favorite foods ever are quinoa, butternut squash, and broccoli so I could not go wrong with this one.

And of course I’ve been eating tons of chocolate goji bars lately. Maybe it wasn’t such a good idea to make these because they are so addicting and so good. I eat one two after lunch AND dinner. Oh chocolate and goji you are the bane of my existence.

A Funky Giveaway and a Project

Well, I hope you didn’t have a case of the Monday’s as much as I did! I stayed up WAY too late watching the Oscars and just felt like I was dragging all…day…long. What about those Oscars? I was bummed my girl Meryl didn’t win, but I know Sandra Bullock deserved it.

Anyways-I woke up and made a smoothie from Living Raw Food, which you can now find in my *NEW* Amazon store. I love this book for many reasons. Not only does it have great recipes, but there is so much information about eating raw and why it is so good for you.

My smoothie was a variation of Nicks No 1 Shake. It had:

  • Hemp Milk -that I made from hemps seeds and water in the blender
  • 2 Tbs raw coconut flesh
  • 2 Tbs raw cacao nibs
  • 3/4 C frozen blueberries
  • 1 banana
  • 1 tsp vanilla extract
  • squirt of Agave

It was…excellent. And filling. But the cacao nibs did not give me as much energy as I had hoped.

Lunch was literally the same as yesterday so instead of showing you that, I will tell you about my new project. Project Rise and Shine!!! If you’ve been reading my blog for a while, you know by now, I am NOT a morning person. In no way, shape, or form do I like waking up in the morning. What can I say-I love my sleep! And on top of that I usually don’t have to be into work until 11am, so given that, I ALWAYS want to sleep in as late as possible. However, I’m always running late, I never feel prepared, and I’m always running behind schedule. I hate feeling that way. And now with spring right around the corner, and the sun shining every morning, I feel like this is the perfect opportunity to start getting up earlier to get more done in the morning before I go to work. But the main key, however, is to go to bed early! So my goal for Project Rise and Shine is to be IN BED LIGHTS OUT by 10:30pm and no later. I’m a sucker for late night TV, and get carried away watching Chelsea Lately and E! News until 12am, but that needs to stop because I’m tired of feeling tired. I am hoping going to sleep earlier will help me wake up earlier. So tonight starts Project Rise and Shine, and I will be letting you know how it goes through out the week. Dinner was epic. I haven’t been able to stop thinking about this meal ever since I saw it on Gina’s blog. I love shrimp salad so I wanted to give this a whirl. Epic I tell you..Epic.

I served my shrimp salad on butter lettuce wraps with some leftover rice from last night and avocados and raw broccoli on the side. The avocados were a perfect addition to the wraps if I do say so myself.

The shrimp salad recipe was taken from the lovely Ina Garten, but I followed Gina’s *healthier* version by using canola mayo instead of regular.

Best. Shrimp Salad. EVER! Oh my gosh, it exploded with flavor and was soooo good. Words just don’t even describe.

Oscar Night Dinner

It’s OSCAR NIGHT! I get so excited for this night, and other award nights, but I think I like to see the red carpet more than anything else. Of course I love to find out who wins, but I love watching the red carpet pre-award show.

Yesterday I was watching one of my favorite cooking shows, 5 Ingredient Fix, and I came up with a brilliant idea for my dinner tonight. My dinner was very similar to the recipes made on the show, with a few tweaks of course.

But before I get to all that, I want to show you some eats this weekend. We finally went grocery shopping yesterday! We HAVE FOOD!

I made healthy sloppy joes with lean ground turkey on Arnold Thins with a side of spinach and Mann’s sweet potato fries before heading to see Alice in Wonderland last night. Great movie! Go see it!

I brought a Chocolate Metromint water for the movies. I’m obsessed with this water. You don’t even understand. It’s like dessert in a bottle. YUM!

I also made Anne’s granola bars last night, but substituted almonds and hazelnuts for pumpkin and sunflower seeds. I just chopped them up a bit in my magic bullet and added them to the Dry ingredients. The bars came out great, and tasted fantastic! Anne-you really know what you are doing over there!

After wrapping them all up in aluminum foil, I had some extra crumbs that I put aside to add to my yogurt this morning.

I topped a *new flavor to me* strawberry and banana Chobani with my leftover granola bar crumbles. It was wonderful.


I also packed my lunch for work today in my awesome little lunchbox. I packed a sloppy joe, celery sticks, and an apple. It made me think of my grade school days.

My sloppy joes were not the original kind because we didn’t have any bbq sauce, so I made them with marinara instead. I added some fresh basil and spinach to mine today, which made them just that much better. With a side of crunchy celery of course.


We are starting to sell fresh bread in the store, on Friday’s and Saturday’s as part of our wine tasting, from a place called Lyon Bakery. Good thing those are the two days I’m off because I would devour my weight in fresh crusty bread. It looks like the bread did well because when I came in today there were only a few little pieces left from the tasting. Of course I tried some.

Alright-now to my favorite part-the Oscar Dinner. For some reason Chris was really excited to watch the Oscars this year so I wanted to make a special dinner for us. Based on the recipes from 5 Ingredient Fix, I made Asian Style Salmon with Ginger and Lemongrass infused edamame rice. How could you go wrong with that?

I baked the salmon on top of a bed of sliced ginger and lime slices and soaked it in unfiltered sake. I chose unfiltered because it is sweeter and creamier than filtered sake. I baked the salmon covered at 400 degrees until it looked done. I kind of eye ball fish because I never know how long to keep it in the oven.


The rice was so incredibly easy. I boiled a big pot of water and threw in large pieces of ginger, garlic, and lemongrass. Lemongrass won’t taste like anything unless you beat it up a little so you just need to smash it with the back of a knife and bang on it to let out all the essential oils.

Once the water is to a boil, let it cook for a few more minutes to infuse the water with the flavors.

Then add in the rice and cook through(I used brown jasmin rice). At the very last minute add the frozen edamame. Once the rice is finished just drain it in a colander, take out the chunks of garlic, ginger, and lemongrass, and Voila!

I served my salmon and rice with some asparagus, and I used the leftover sake to make a sake-tini shaken with fresh lemon and lime juice. It was one award winning dinner. Chris gave it a 9 on a scale from 1 to 10, and he doesn’t lie. DELICIOUS!

I’m on a roll with creamy Spinach and Artichoke Dip

I have to tell you…as much as blogging can be stressful, and time consuming, it has really opened my eyes to so many new and exciting things. Every time I think of an old favorite of mine, I try to change it into a healthier recipe. I get so many ideas from the blog world, and now I’m always trying to re-create things for myself. For instance, I LOVE spinach and artichoke dip, but there aint nothin’ healthy about that. So I was putsin’ around in the kitchen the other day and put together this healthier version. I couldn’t believe how incredible it came out, and how similar it tasted to the original thing.

I started with frozen spinach, frozen artichokes, and plain flavored Chobani Greek yogurt.

I microwaved about 1 Cup spinach and 3/4 C artichokes until they were thawed and warm. Then, I added the Greek yogurt and stirred in nutritional yeast (in replace of cheese), garlic salt, onion powder, sea salt, and pepper to taste.

Once everything was mixed up I transfered it into a baking dish and added a little more nutritional yeast on top.

Popped it in a 350 degree oven for about 10 minutes, and it was ready to serve.

Stunning…right? I served with 100 calorie whole wheat tortillas, and a little tomato sauce for dipping as well. This artichoke dip is actually healthy, and tastes very similar to the real thing. I think I found a new favorite snack.

I have an Oscar worthy dinner planned for tomorrow, but I have to run to the grocery store for some ingredients. I feel like I’m on a roll with my Cho-yo and Chocolate goji bars yesterday, my spinach and artichoke dip today, and now a dinner fit for the Oscars tomorrow. I also plan on making Anne’s granola bars later today so I have my work cut out for me. Have a great Saturday!

Cho-Yo and Chocolate Goji Bars

I know I’ve mentioned it thousands of times on the blog, and now I will show you how I make the infamous Chobani Fro-Yo (Or Cho-Yo as I like to call it). Now the ingredients are going to vary depending on what you want in the cho-yo, but for the most part everything else will be the same.

First I start with a semi-frozen Chobani Greek yogurt. Today I chose the plain flavor because it was all I had left. I don’t like the yogurt to be rock solid because it won’t blend well so about 1-2 hrs in the freezer is really all it needs.

Next, add the Chobani, and any other mix-ins you desire to the food processor. In my case I wanted chocolate so I added 2 heaping Tbs of Raw Organic Cocoa powder, Mesquite, Agave, and a few frozen blueberries and blackberries for good measure. ;-)

Start spinning. Mix in the food processor until rich and creamy.


Sometimes if the yogurt is too frozen and the food processor is having a hard time, I will add a little almond milk (or whatever milk you prefer), and then spin some more until creamy.

Last, but not least, top with your favorite toppings or eat by itself and Enjoy!!! The creamy, fruity, chocolate yogurt is just amazing. I would rather eat this over regular ice cream now, and it packs in the protein. SO GOOD and basically fool proof.


Try these other delicious mix-ins:

  • Pumpkin
  • Carob Powder
  • Cacao Nibs
  • Nut Butter (Try Peanut Butter & Co. Dark Chocolate Dreams for Pure Decadence)
  • Any type of frozen fruit

There are endless possibilities. I would love to hear what some of you come up with. Tell me what your favorite Cho-Yo mix ins are.

Here is another great easy peasy dessert for you to try. Dark Chocolate Goji Berry Bars with sea salt. Way back in December I received a Vosges dark chocolate goji bar from HEAB in my blogger secret santa package. Not being familiar with Vosges, I really had no idea what to expect. HOLY CHOCOLATE MOLY!!!! This was by far some of the best chocolate that has ever touched my lips. Before I knew it the entire bar was gone, and I was crying for more. Heather-thank you for opening my eyes to the BEST chocolate around. It was to. die. for.

However, when I found out how much the bars cost at the grocery store($8 bucks a bar), I decided to re-create it myself. The entire process took a total of 10 minutes from start to finish.

First fill up a pot with about 2-3 inches of water and place it on the stove on high heat. Stick a glass mixing bowl on top of the pot, but make sure the bowl does not touch the water. Next, add the chocolate of your choice to the bowl. In my case, I used organic dark chocolate bars that I broke up into small pieces of easy melting.

Keep stirring the chocolate until it is melted and then add your goji berries. The amount of goji berries you add is really up to you depending on what you like. In my case I added 1 Cup of goji goodness.

Stir until all goji’s are covered, and then transfer the chocolate to a baking sheet lined with wax paper. Once the mixture is on the baking sheet, flatten it out with a spoon or cake spatula.

The last step is to sprinkle with sea salt on top once the chocolate has cooled a little, but is still not completely solid. I used Himalayan sea salt since it is my favorite. I just love the combination of sea salt on chocolate. Feel free to omit this step if you prefer your chocolate with out the hint of salt.

Then just stick the chocolate in the fridge until solid. How easy was that?

This Should Be Illegal

Ohhh it was another rainy day in good ‘ole DC. Gotta love it. To make myself all warm and cozy inside I had another amazing bowl of oats this morning for breakfast. Have you noticed that in the blog world we call it “oats” instead of “oatmeal”? I wonder why that is because growing up we just called it oatmeal. I always ate my oatmeal with honey and milk and that was it. I have since then expanded my oatmeal palate, but to this day I still have not tried savory oats. I will have to get up enough courage to do that soon.

This morning was meant for Peanut Butter and Jelly Chia Oats, and boy was it awesome. It was so good that it should have been illegal. Every bite was better than the last. I made the oats with:


I’m telling you-these were some of the best oats I’ve ever had. I also tried a Elderberry Biotta Juice. Biotta was so nice to send me some of their juices to try, but I’ve been a little hesitant since their flavors are a little unusual for me. They are all 100% organic juice with very basic ingredients, and have fabulous health benefits. Their flavors include potato, sauerkraut, beet, elderberry, vegetable juice blend, celery, breakfast juice blend, energy juice blend, Breuss Vegetable Juice, and wild bilberry. I wanted to try something on the sweeter side, and I really enjoyed the breakfast blend when I tried that, but I wasn’t sure about these other juices. I went with the Elderberry hoping it was fun and fruity.

Well telling from the amount of calories and the thickness of this drink I knew I wasn’t going to drinking the entire bottle in one sitting. I decided to try a little by itself, then mix with water. It was definitely thick and fruity, but I’m still not feeling this one.

According to the Biotta website here are the health benefits for the Elderberry Juice.

  • Rich in mineral nutrients aids in relieving inflamed and blocked respiratory passages
  • The toxins from air pollution has lead to an ever increasing strain on our respiratory passages
  • The natural active ingredients in elderberries can help regenerate the cilia’s filtering function in the respiratory passages
  • Has a positive influence on the immune system
  • The juice from elderberries also helps relieve colds and flu

I ended up just going with some coffee instead and enjoyed it immensely with my all mixed up Peanut Butter and Jelly chia oats. Now that is what I call break-fast!

Those oats filled me up for hours, and then I stumbled over to Balducci’s for lunch. The microwave at work is broken, and I wasn’t able to bring leftovers to heat up. I love Balducci’s because there is so much to choose from, but I always end up spending WAY more than I had planned. ALWAYS!

Today I chose a variety of goods. Seaweed salad, salmon sushi with brown rice, and Italian Wedding Soup. I ate all the sushi and soup, but about half the seaweed salad.



I also had a Metromint Water. I have not mentioned these yet on the blog, and I don’t know why, but THEY ARE FLIPPIN’ AMAZING! I am 110000000% in love with this water. I never thought I would like mint in my water, but it is incredibly refreshing and soo addictive. It comes in flavors like peppermint, spearmint, cherry, lemon, and would you believe it..chocolate! It’s simply water, and mint. No sugar, no fake stuff, no nothing. Today I had the lemonmint flavor.

You never need dessert with this water because it is so refreshing you don’t want anything else. I could drink the chocolate flavor AS dessert. I’m not kidding you-if you haven’t tried this water-GO TRY IT NOW!

Dinner was simple…home-made pizzas on tortillas. I was in the mood for a BBQ chicken pizza sans chicken. I topped mine with BBQ sauce, kidney beans, green bell pepper, low fat mozzarella cheese, and a little cilantro. I guess this would be considered Vegetarian BBQ pizza.

Chris also enjoyed his, but added sausage because my man needs his meat ;-)

Now That’s One Amazing Sauce

Do you ever wish there was just a little more time in the day? I feel like I’m always playing catch up. Its quite frustrating actually, but moving on…

This morning I prepped some veggies for my dinner tonight, and made some yummy oats while I was at it. First I started with a hot water and lemon.

I bought some organic lemons the other day, and they just taste so much better than non organic. I never really thought I could tell a difference until I did a side by side test, and the organic definitely wins! Lemons aren’t on this list, but this is a great reference for what organic foods we should spend money on, and which ones don’t really matter. I found it incredibly insightful.

My oats were a repeat of the other day, but I added something new. I took about 3/4 C leftover oats, which were made with chocolate almond milk, and added 3/4 C berries, 1 Tbs MaraNatha All Natural Peanut Butter, and then the new secret ingredient..MESQUITE!

Mesquite powder is very high in magnesium, potassium, iron, calcium, zinc, fiber, and digestible proteins (including lysine). It also acts as an antioxidant, and its glycemic index is low in spite of its sweet taste. It can be used as either a gluten-free flour or a superfood seasoning.

I mean what isn’t to like about this amazing powder? And it tastes like a combination of cinnamon, chocolate, and coffee. MMM. None the less, it was the PERFECT addition to my oats because it made them just that much better.

I was planning on making dinner, but I didn’t get home until really late so I decided to 86 the chili and use the ingredients to make a different dish. Lots of different ingredients, but one delightful dinner. I made pasta topped with *meat* aka Morning Star Meal Starters, green pepper, onion, and Mann’s Packing Co. butternut squash topped with a creamy tomato sauce.


This was my first time using meatless meat, and I’m not 100% on board yet, but it definitely wasn’t too far from the real thing. To be honest-Chris said I quote “This is delicious” And for him to not make a fuss over the weird taste or texture of meatless meat, than that is pretty darn good.

Pasta with a little bit of everything

Pasta topped with my fave sauce…creamy tomato sauce. I received these Bertolli sauces as part of the Foodbuzz Tastemaker program, and decided to mix the two together to make one sensational sauce.

Is it March Already?

I am usually a person who LOVES winter, but with all this snow and having to be on crutches, I’m just over it. I’m ready for Spring. Bring it on.

Lately I’ve been eating out a little more than I usually do just for different reasons, but I’ve been doing my best to make good decisions at restaurants, which is something that is usually difficult for me. I have also been enjoying some things at home. The other day I made my famous home made Guacamole with semi-homemade tortilla chips. La Tortilla Factory had sent me some samples of their new line of corn tortillas, and I decided to bake them until they became chips.

The corn tortillas come in White Corn, Yellow Corn, and Chipotle. I tried a sampling of each. I like how soft and flexible the corn tortillas are, and I really like that they are whole grain, but I wasn’t too impressed with what they tasted like. After baking them, they weren’t as bad, but I’m just not liking the flavor of these tortillas. The chipotle tortilla was surprisingly spicy. I thought it would have the flavor of chipotle, but it definitely had a kick to it.



My famous guacamole is by far the best I’ve ever had. (Not to toot my own horn or anything, but I think it is. ;-) ). When Chris and I were driving back east after living in LA, we stopped in San Antonio and ate at a cute restaurant on the Riverwalk.

Long story short this restaurant, made homemade guacamole table- side and it was the best I had ever had. So I remembered exactly what was in the guacamole and have been perfecting the recipe ever since. I am going to share this recipe with you because I want you to see for yourself just how amazing it really is.

Ingredients:

  • 2 Ripe Avocados
  • Juice of 1 Small Fresh Orange
  • 2-3 Tbs Fire Roasted Salsa
  • 2-3 Tbs Chopped Red Onion
  • 1 Handful Chopped Fresh Cilantro
  • 3 pinches Himalayan Sea Salt (or any type of good sea salt)
  • 1 pinch of fresh ground pepper (optional)

Directions: Cut avocados up in a medium-large bowl with a knife and spoon. This is the easiest way to not make them mushy. Add the following 6 ingredients and mix gently. Add more salt or pepper to taste. Serve with fresh corn or flour tortilla chips and a refreshing margarita. ;-)

I didn’t have all the ingredients yesterday to make this exact guacamole, but I made do with what I had, and it was pretty good.


I have to say, out of all the tortillas-my favorite were the yellow corn.

I also made one delicious smoothie this morning for breakfast. It was a PB&J green monster. I needed something pretty easy on my stomach and I was in the mood for something cold and smooth-hence the smoothie. In my smoothie I had:

  • Chocolate and Vanilla Unsweetened Almond Milk
  • 1/2 of a frozen banana
  • 3/4 C frozen blueberries
  • 1 Tbs MaraNatha All Natural Peanut Butter
  • 1 packet Chocolate Amazing Grass Supergreens

It was smooth, cold, peanut buttery, goodness. I loved this combo!!!!

March Wine of the Month

I can’t believe it is already March!!!! This month I picked a wine that reminds me of summer because this is just the time when I am starting to move out of winter and get excited for the warmer months. And this year in particular, I’m definitely ready after all this snow. The wine I’m picking for this month is called Bodegas Carrau Sauvignon Blanc “Sur Lie” 2009 from Uruguay. I have not tasted many wines from Uruguay, and honestly I don’t even know if they make many wines in Uruguay, but what I do know is that this wine is wonderful. Here is the wine review from the our store because it says it best.

This delicious Sauvignon Blanc is from the cool coastal regions of Uruguay where the weather and soil resemble the best white wine production areas of Bordeaux and New Zealand. Grown and made by a 10th generation family winemaker, the wine is picked and fermented at cool temperatures in stainless steel tanks and then given six months of “sur lie” (on the lees) contact to preserve fruit and add depth and complexity.

Like many Sauv Blancs, this is nicely aromatic and shows notes of lemon, tangerine, and other citrus fruits. In the mouth the fruit flavors focus on tangerine, lemon, a little green melon, and a note of tart lime candy with just a tiny hint of fresh grass. Although the wine’s firm acidity shows clearly on entry and the fresh, bright, finish, the vibrant fruit is swaddled in a creamy, rich, texture that makes it seem almost full-bodied and very, very, deep.

This is probably the most versatile Sauvignon Blanc you’ll find anywhere. It has all the bright citrusy fruit and zip that New Zealand Sauvignon Blanc drinkers crave, plus the richer, creamier, texture sought by folks who love white Bordeaux, Chardonnay or Pinot Gris. Sip it on its own or pair with meaty fish like halibut or swordfish, pasta and chicken salads, grilled white meats, or most any dish with a citrus or summer fruit element.

This wine is wonderful to sip on a warm summer day or even to use while you’re cooking. I just love the creaminess of it against the acidity. It makes for a really unique, enjoyable wine.
